Culinary Team From Vancouver Island Takes On Healthy Chefs Competition

For the first time in its 18-year history, the Healthy Chef Competition welcomes a team from Vancouver Island to compete against nine other teams from the Metro Vancouver area on March 22, 2017. This annual competition – presented by the BC Produce Marketing Association and the BC Chefs Association – promises to be a fun evening of gourmet dining.

Led by Chef Debbie Shore, Chef Francois De Jong, and Chef David Nolan, the team from the Culinary Institute of Vancouver Island / Vancouver Island University will be creating culinary delights that feature vegetables as the main focus of the entrée plates, with B.C. farm-raised salmon being used as the perfect accompaniment to create a healthy, balanced meal.

The official panel of judges hasn’t been confirmed, but will consist of members of the BC Chefs Association. All teams will be judged based on their bold and innovative use of ingredients, overall taste of each element, and food presentation in each of the three categories: “Best Entrée Healthy Plate”, “Best Dessert”, and “Children’s Entrée” (a new category being introduced this year). In addition, food and event bloggers will select the best table display for the “Table Award” and the Audience will be tasked in selecting a “People’s Choice” award.
